When you set the watch you slide the hands around the pinion on a friction bracket, you don’t actually turn the movements, whether forward or backward. So in principle back hacking should not be an issue. However, I‘d not do it in the hours around the date change, because that’s linked to the setting train and afaik doesn’t like going backwards.
Personally, I don’t need my watch to be accurate to the second, so I don’t back jack mine. But since I do like my second hand to hit the 60 mark when the minute hand is aligned with an index, I tend to advance it a bit and release it when the seconds hit 60. Worked perfectly for me so far.
