4 digit reference movement servicing...

My AD said that any 4 digit reference (1500 calibers) must go back to Geneva for service...

I called a couple of very well known and reputable independent watchmakers in the US and was told that they would be happy to look at the watch, but as parts were hard to come by, they could not guarantee that they could service it...???

I just feel vintage would not be vintage if it is as easy to service as a modern watch.
I prefer vintage watches for many reasons and difficulty to get parts or service is not a deterrent, it’s a hobby challenge for me.

That's pretty much the situation these days for all vintage watches, not just Rolex. If parts are needed, they need to be found. You should probably look for someone who has accumulated a stock of parts and/or has some confidence that they can find parts if they are needed. For example, if a watchmaker says "if parts are needed, I can't fix it," then I probably wouldn't send them the watch.

My experience has been been slightly different sourcing parts for the vintage models. I have never had an issue sourcing parts that I have needed and found them readily available for the Datejusts, GMTs/Subs and other models with the 1520/1530 or 1570 movements. Usually they can be found without too much stress. Now, Daytona parts might be a totally different story since I haven't needed to have any of those models serviced.
