A ring is for the engagement, a watch a great gift. So I'd say propose and get a watch at a later date, maybe during a getaway, once you set the date (so she can keep track of it), when she leaves solo on a trip, coming back from a nice dinner, special holidays, the anniversary of meeting/start dating, etc....congrats on a big and fun step in life.
