What's for dinner guys....?????

In the past I followed Alton Brown’s method to the “T” - but have adapted a few tricks of my own to simplify.

I don’t wrap it up and let the air do the work. For steaks 1-2 weeks is fine. But I’ve done standing prime roasts of 5 ribs for as long as 5 weeks.

I use a large tray to allow plenty of air circulation. In the past I used the refrigerator but found that it made the interior smell a bit.

So I’ve repurposed an old wine chiller. It’s a 40 bottle model about 40” high. Plenty of air circulation.

I place the steaks on chopsticks instead of metal racks - polished bamboo is great - I just use the sticks from carry-out Chinese orders.

The only cheat of mine is I use a rub salt/pepper/onion/garlic powder. It helps pull moisture to the surface and retards any bacteria on the surface. But classicists don’t put anything on the surface.

Crawfish Etoufee in Shreveport, Louisiana today. This place was recommended by the local Rolex dealer and is in an old gas station. Best etoufee I’ve ever had!
