It was certainly a girthy tentacle. lol.

I think they marinate them in some kind of sauce. As it wasn’t cooked. Or it was just super rotten and fermented.

I just landed stateside about an hour ago. and my first meal was a cheeseburger to wash my mount out.

At our monthly Danish Kroaften dinner at the Scandinavian Centre..Open faced sandwiches with 'snaps' (Akvavit) and beer. Enjoyable as always. Largest crowd ever of 167 people and raised over $1100. for local charities..

We had made our own interpretation - my wife had experimented with this version over the years.

It was a layered approach with no lemon, no butter in the chopped egg.

Instead, it had a thin swath of Hollandaise under the steamed Asperges. Then topped by a layer of chopped egg mixed with a Béarnaise over the Asperges.

Two sauces and the fresh Tarragon in the Béarnaise could be sublime. Of course, BAM it with chopped fresh curly parsley for the bright color pop and respect for the Flamande roots.

Very good your take on it seems amazing.
I use parsley but i set a small pan on very low heat with butter, nutmeg ,parsley and pepper. I take my boiled eggs separate whites and yolk. Mash em up but not too much take the butter and pour it on the eggs. If i see the yolks are nit velvety i mix the mixture a bit more.
I keep it as simple as possible. :)
