Just got the Primo XL up to temp now and will give it about 15 minutes to make sure it settles out to a steady temp, and then it's time to let the Flame Boss 200 to take over for the night. Should have some tasty pulled pork in about 12-16 hours.

Thanks guys. Doing it low and slow at home you end up with so much more juicy pulled pork than you'll ever find at a barbecue joint where they have to keep it reheated. I'm about to have leftovers after just finishing a mtn bike ride.

I hope everyone had a good Labor Day weekend. Ribs are just about done here. 2.5 hrs smoking, 1.5 hrs in foil, and 1 more hour on indirect heat. 2 slabs dry rubbed and sauced, and one with just the rub.
