Is it safe to wear expensive watches in Paris? Watch will be hidden in sleeve most of the time. Will security checks in major attractions require to remove jackets/coats upon entry?

No, you will not need to. While anything could happen, I wore a submariner on a recent visit with absolutely no problems.
