30 days? a month? 3 days? Whats going on? Face to face deal is done as soon as you exchange watch for money that's not debatable, or am I missing something?

Exactly. 3 day grace period only for shipped purchases and only then if the watch is not as described. Not for buyers remorse.

OP. Once the watch left your possession it is no longer your responsibility or your obligation to do anything. If the value of the watch goes up $3,000 in 30 days, can you call thebuyer and ask for the appreciation in value? No. It’s a two way street. If you want to be a nice guy and throw some money away, then that’s up to you. Otherwise he needs to handle it on his own dime

he is SOL imo. he inspected it and owned it for a long time.
